Lemon Ricotta Cheese Pancakes
2 Great Cities, 1 Great University, “One Great Dining Destination”.  Lafayette-West Lafayette is home to many diverse dining locations and one that will leave you satisfied is Baja Peninsula, with its California style American cuisine. Do you have a restaurant you have driven by many times and every time you drive by it you say, "I want to try out that place."  This is what I said about Baja Peninsula the last few years.  My mother had shared how wonderful the food was, and I was enthusiastic about going.  Finally this past summer I made my first visit.  I wasn't sure what to encounter as the exterior of the building is nothing to write home about, but when you walk in the atmosphere is bright, welcoming, and very simply decorated.  We were instantly greeted by the hostess and taken to our seats.  The hostess shared the breakfast and lunch specials for the day, but the group of ladies I was with decided to order from the menu. My friend Ashley ordered their acclaimed lemon ricotta cheese pancakes which she said were light and airy with a nice addition of lemon to not be too overpowering.  Another friend, Kristine, ordered their pesto panini, which featured fresh mozzarella and tomatoes.  It is a simple dish but she shared it was done perfectly.  I ordered the herb roasted chicken breast with roasted garlic, mashed potatoes with asparagus and thyme demi glaze.  I am a meat and potatoes gal, and this was great!  We really enjoyed our food and our visit.
